  1. 1. Remove the heads and shells from the shrimp.
  2. 2. Cut the shrimp open along the back.
  3. 3. Remove the vein with a sharp fork or knife.
  4. 4. Rinse the shrimp under running water.
  5. 5. Pat the shrimp dry well with a kitchen towel.
  6. 6. Wash the green asparagus.
  7. 7. Trim the woody lower ends from the asparagus.
  8. 8. Boil the asparagus in salted water for 8 minutes.
  9. 9. Drain the asparagus.
  10. 10. Let the asparagus drip dry.
  11. 11. Peel the shallot.
  12. 12. Dice the shallot into small cubes.
  13. 13. Peel the ginger.
  14. 14. Peel the garlic.
  15. 15. Chop the ginger and garlic very finely.
  16. 16. Heat 1 tablespoon of oil in a pan.
  17. 17. Place the shrimp in the hot pan.
  18. 18. Fry the shrimp for 2 minutes on the first side.
  19. 19. Fry the shrimp for another 2 minutes on the second side.
  20. 20. Remove the shrimp from the pan.
  21. 21. Season the shrimp with salt and pepper.
  22. 22. Set the shrimp aside.
  23. 23. Add 1 tablespoon of oil to the pan.
  24. 24. Fry the shallot, ginger, and garlic while stirring for 3 minutes.
  25. 25. Remove the onion mixture from the pan.
  26. 26. Place the onion mixture on a plate.
  27. 27. Heat the remaining oil together with the sesame oil in the pan.
  28. 28. Fry the asparagus for 2 minutes.
  29. 29. Pour the chicken broth into the pan.
  30. 30. Add the ginger and garlic back into the pan.
  31. 31. Season the mixture with soy sauce, salt, pepper, and sugar.
  32. 32. Add the shrimp to the pan.
  33. 33. Heat the shrimp briefly in the sauce.
