🍽️ Shrimp with green asparagus

Ingredients
- 12 Scampi
- 800 g Asparagus
- 1 piece Ginger
- 1 Garlic clove
- 1 Shallot
- 4 tbsp Oil
- 1 tsp Sesame oil
- 200 ml Chicken broth
- 2 tbsp Soy sauce
- Salt
- Pepper
- 1 pinch Sugar
Instructions
- 1. Remove the heads and shells from the shrimp.
- 2. Cut the shrimp open along the back.
- 3. Remove the vein with a sharp fork or knife.
- 4. Rinse the shrimp under running water.
- 5. Pat the shrimp dry well with a kitchen towel.
- 6. Wash the green asparagus.
- 7. Trim the woody lower ends from the asparagus.
- 8. Boil the asparagus in salted water for 8 minutes.
- 9. Drain the asparagus.
- 10. Let the asparagus drip dry.
- 11. Peel the shallot.
- 12. Dice the shallot into small cubes.
- 13. Peel the ginger.
- 14. Peel the garlic.
- 15. Chop the ginger and garlic very finely.
- 16. Heat 1 tablespoon of oil in a pan.
- 17. Place the shrimp in the hot pan.
- 18. Fry the shrimp for 2 minutes on the first side.
- 19. Fry the shrimp for another 2 minutes on the second side.
- 20. Remove the shrimp from the pan.
- 21. Season the shrimp with salt and pepper.
- 22. Set the shrimp aside.
- 23. Add 1 tablespoon of oil to the pan.
- 24. Fry the shallot, ginger, and garlic while stirring for 3 minutes.
- 25. Remove the onion mixture from the pan.
- 26. Place the onion mixture on a plate.
- 27. Heat the remaining oil together with the sesame oil in the pan.
- 28. Fry the asparagus for 2 minutes.
- 29. Pour the chicken broth into the pan.
- 30. Add the ginger and garlic back into the pan.
- 31. Season the mixture with soy sauce, salt, pepper, and sugar.
- 32. Add the shrimp to the pan.
- 33. Heat the shrimp briefly in the sauce.
