🍽️ Spicy Scampi in Tomato Sauce

Ingredients
- 24 Scampi
- 1 Onion
- 1 Garlic clove
- 2 tbsp Powdered sugar
- 1 tsp Cornstarch
- 150 ml Poultry broth
- 5 tbsp Fish sauce (Nuoc Mâm, Asian market)
- 2 tsp Tomato paste
- 2 tbsp Oil
- Salt
- Pepper (from the mill)
- 2 tbsp Chives
Instructions
- 1. Peel the scampi and remove the black vein.
- 2. Rinse the cleaned scampi under running water.
- 3. Peel the onion and the garlic.
- 4. Finely chop the onion and the garlic.
- 5. Heat the oil in a casserole dish or a wok.
- 6. Sauté the onions and garlic in the hot oil.
- 7. Add the scampi, fish sauce, powdered sugar, and tomato paste to the pan.
- 8. Stir all ingredients well to combine them.
- 9. Pour in the broth.
- 10. Let the sauce simmer for about 10 minutes.
- 11. Season the sauce to taste with salt and pepper.
- 12. Mix the starch with a small amount of water until smooth.
- 13. Pour the starch solution into the sauce while stirring constantly.
- 14. Bring the sauce to a brief boil to thicken it.
- 15. Sprinkle the finished dish with chive rings.
- 16. Serve the scampi immediately.
