🍰 Fruit-filled Savarin Ring

Ingredients
- 100 ml lukewarm milk
- 15 g yeast
- 1 pinch sugar
- 250 flour
- 3 eggs
- 1 pinch salt
- 75 g soft butter
- 4 tbsp sugar
- butter (for the mold)
- 2 tbsp ground hazelnuts
- 1 untreated lemon
- 3 oranges
- 1 tbsp sugar
- 500 g mixed fruit (to your liking, chopped small, e.g. strawberries, kiwis, blueberries)
- 150 g powdered sugar
- 2 tbsp lemon juice
Instructions
- 1. Take half of the milk and mix it with the yeast and the sugar.
- 2. Put the flour into a bowl and press a well into the center.
- 3. Pour the yeast milk into the well.
- 4. Cover the bowl with a cloth.
- 5. Let the starter dough rise for about 15 minutes in a warm place.
- 6. Attach the dough hooks to your electric hand mixer.
- 7. Gradually knead the eggs, salt, butter, and sugar into the dough.
- 8. Stir in the remaining milk into the dough.
- 9. Knead the dough until it is smooth and pliable.
- 10. Cover the dough and let it rise until its volume has approximately doubled.
- 11. Grease a ring mold with butter.
- 12. Line the mold with hazelnuts.
- 13. Knead the dough briefly again.
- 14. Place the dough into the prepared mold.
- 15. Let the dough rise again until it almost reaches the rim of the mold.
- 16. Preheat the oven to 200 degrees.
- 17. Place the mold on the lower rack.
- 18. Bake the savarin for about 35 minutes.
- 19. Perform the skewer test to check for doneness.
- 20. Remove the savarin from the oven.
- 21. Let it cool briefly in the mold.
- 22. Turn the savarin out onto a plate.
- 23. Wash the lemon and dry it.
- 24. Cut very thin strips from the lemon peel.
- 25. Finely chop the lemon peel.
- 26. Set the chopped peel aside.
- 27. Squeeze the lemon and the oranges.
- 28. Make sure you have about 1/4 liter of juice.
- 29. Sweeten the juice with 1 or 2 tablespoons of sugar.
- 30. Soak the still warm savarin with the juice.
- 31. Let the savarin cool down.
- 32. Mix powdered sugar with lemon juice to make a thick glaze.
- 33. Decorate the top of the savarin with the glaze.
- 34. Mix the prepared fruits with the chopped lemon peel.
- 35. Add the powdered sugar.
- 36. Let the fruit mixture steep for about 30 minutes.
- 37. Fill the fruit salad into the savarin shortly before serving.
