🍕 Homemade Sourdough Pizza

Ingredients
- 40 g sourdough starter (wheat sourdough)
- 405 g lukewarm water
- 125 g whole wheat flour
- 455 g spelt flour Type 1050
- 17 g salt
- 1 tbsp olive oil
- 1 clove of garlic
- 400 g crushed tomatoes
- pepper
- 1 tsp dried oregano
- 8 black pitted olives
- 125 g mozzarella
- 1 handful basil
Instructions
- 1. Mix the sourdough starter with 80 grams of lukewarm water.
- 2. Add 80 grams of whole wheat flour and stir the mixture well.
- 3. Cover the bowl and let the dough rise in a warm place for 3 to 4 hours.
- 4. Add the ripe sourdough along with the remaining lukewarm water and flour to a large bowl.
- 5. Knead the ingredients into a smooth dough and incorporate the salt.
- 6. Knead the dough vigorously for 10 minutes.
- 7. Place the dough in a bowl, cover it, and let it rise in a warm place for 3 hours.
- 8. Stretch and fold the dough once every 30 minutes during the first 2 hours.
- 9. Cover the bowl and refrigerate it for 24 hours.
- 10. Take the dough out of the fridge and let it warm up to room temperature for 2 hours.
- 11. Divide the dough into 4 equal pieces.
- 12. Place the dough pieces on a lightly floured work surface.
- 13. Cover the dough balls with a clean kitchen towel and let them rest for 30 minutes.
- 14. Heat some oil in a pot for the sauce.
- 15. Peel the garlic and slice it thinly.
- 16. Sauté the garlic slices over low heat in the oil.
- 17. Add the pureed tomatoes to the pot.
- 18. Season the sauce with salt, pepper, and oregano.
- 19. Bring the sauce to a brief boil and then set it aside.
- 20. Place a piece of baking paper on the work surface.
- 21. Take one dough ball and place it on the baking paper.
- 22. Gently press the dough from the center outwards to form a pizza shape.
- 23. Make sure to leave a slightly thicker edge.
- 24. Repeat the process with the remaining dough balls.
- 25. Spread the prepared sauce over the pizza bases.
- 26. Top the pizzas with olives and mozzarella.
- 27. Preheat the oven to 250 degrees (convection 230 degrees or highest gas setting).
- 28. Place a baking tray in the oven to heat up.
- 29. Slide the topped pizzas onto the hot baking tray.
- 30. Bake the pizzas in the oven for about 10 minutes.
- 31. Wash the fresh basil and shake it dry.
- 32. Pluck the basil leaves from the stems.
- 33. Garnish the finished pizza with the basil leaves.
- 34. Serve the pizza immediately.
