🍳 Sourdough Pancakes with Blood Orange, Chocolate and Pistachios

Ingredients
- 200 g spelt wholemeal flour
- 1 pinch salt
- 200 g sourdough (wheat or spelt; refreshed or leftover starter)
- 2 eggs
- 2 tsp honey
- 250 ml oat drink (oat milk)
- 2 tsp baking powder
- 2 blood oranges
- 30 g dark chocolate
- 40 g pistachios
- 2 tbsp coconut oil
- 4 tbsp soy yogurt
Instructions
- 1. Whisk flour, salt, sourdough starter, eggs, honey, and oat drink in a bowl.
- 2. Place the bowl in the refrigerator overnight.
- 3. Take the dough out of the refrigerator the next morning.
- 4. Stir baking powder into the dough.
- 5. Let the dough rest for 5 minutes.
- 6. Peel the blood orange.
- 7. Cut the blood orange into small pieces.
- 8. Finely chop the chocolate.
- 9. Finely chop the pistachios.
- 10. Heat oil in a frying pan.
- 11. Place 2 heaped tablespoons of dough into the hot pan.
- 12. Fry the pancakes over medium heat for 1 to 2 minutes on one side.
- 13. Fry the pancakes for another 1 to 2 minutes on the other side.
- 14. Repeat this process until all the dough is used.
- 15. Arrange the finished pancakes on plates.
- 16. Garnish the pancakes with soy yogurt.
- 17. Add the blood orange pieces.
- 18. Sprinkle the chopped pistachios over the top.
- 19. Sprinkle the chopped chocolate over the top.
- 20. Serve the pancakes immediately.
