- 150 g rye whole grain flour
Instructions
- 1. Pour 250 milliliters of lukewarm water into a large bowl.
- 2. Stir the honey into the water until it is completely dissolved.
- 3. Add the rye flour to the bowl.
- 4. Mix everything with a wooden spoon until a smooth dough forms.
- 5. Cover the bowl with a suitable lid.
- 6. Place the bowl in a warm spot with at least 20 degrees Celsius.
- 7. Let the dough rest for three days.
- 8. Stir the dough vigorously once every morning.

- 10. Observe how the dough forms bubbles and increases in volume due to fermentation.
- 11. Ensure the finished dough is thick and smells fresh and sour.
- 12. Store the sourdough in the refrigerator, where it keeps for up to one week.
