  7. 7. Whisk vigorously until no lumps remain.
  8. 8. Stir in the sauerkraut.
  9. 9. Season the soup with salt and pepper.
  10. 10. Simmer the soup over medium heat for 40 to 45 minutes.
  11. 11. Peel and wash the potatoes, then cut them into small cubes.
  12. 12. Add the potato cubes to the soup 15 minutes before the cooking time ends.
