🍽️ Hearty Sauerkraut Soup with Wild Salmon

Ingredients
- 1 onion
- 2 tbsp vegetable oil
- 1 tbsp flour
- 400 ml vegetable broth
- 300 ml milk
- 500 g sauerkraut (can)
- salt
- pepper (from the mill)
- 400 g waxy potatoes
- 100 g crème fraîche
- 1 tbsp chives
- 200 g smoked salmon (whole piece)
Instructions
- 1. Peel the onion, cut it in half, and slice it into thin strips.
- 2. Heat the oil in a pot.
- 3. Sauté the onions until they become translucent.
- 4. Sprinkle flour over the onions and stir well.
- 5. Let the mixture brown slightly.
- 6. Deglaze the pot with broth and milk.
- 7. Whisk vigorously until no lumps remain.
- 8. Stir in the sauerkraut.
- 9. Season the soup with salt and pepper.
- 10. Simmer the soup over medium heat for 40 to 45 minutes.
- 11. Peel and wash the potatoes, then cut them into small cubes.
- 12. Add the potato cubes to the soup 15 minutes before the cooking time ends.
- 13. Stir the crème fraîche into the soup.
- 14. Adjust the seasoning to taste.
- 15. Fill the soup bowls.
- 16. Garnish the soup with chive rings and pieces of wild salmon.
- 17. Serve the soup.
