🍽️ Smarter Soljanka Stew

Ingredients
- 150 g poultry sausages (Viennese)
- 75 g sour cucumber (5 sour cucumbers; jar)
- 200 g red bell peppers
- 200 g yellow bell peppers
- 1 tbsp rapeseed oil
- 1 tsp sweet paprika powder
- 1 bay leaf
- salt
- 400 g peeled tomatoes (can; net weight)
- 250 g mild sauerkraut
- pepper
- 150 ml sour cream
- 240 g rye whole wheat rolls (4 pieces)
Instructions
- 1. Slice the sausages into thin rounds.
- 2. Dice the pickles into small pieces.
- 3. Halve the bell peppers.
- 4. Remove the seeds from the bell peppers.
- 5. Rinse the bell peppers.
- 6. Cut the bell peppers into thin strips.
- 7. Heat the oil in a large pot.
- 8. Add the pepper strips to the pot.
- 9. Sauté the peppers, stirring occasionally, for 1 to 2 minutes.
- 10. Sprinkle the peppers with paprika powder.
- 11. Pour 500 milliliters of water into the pot.
- 12. Add the bay leaf to the soup.
- 13. Season the soup with a little salt.
- 14. Open the can of tomatoes.
- 15. Roughly chop the tomatoes directly in the can using a knife.
- 16. Add the tomatoes along with their juice to the pot.
- 17. Cut the sauerkraut into smaller pieces.
- 18. Add the sauerkraut to the tomatoes in the pot.
- 19. Add the diced sour pickles to the pot.
- 20. Add a little pickle juice to the pot.
- 21. Bring the soup to a boil.
- 22. Reduce the heat to low.
- 23. Simmer the soup for about 15 minutes.
- 24. Stir the soup occasionally.
- 25. Wait 10 minutes after the cooking has started.
- 26. Fold the sausage slices into the soup.
- 27. Heat the sausages through in the soup.
- 28. Season the soup with salt to taste.
- 29. Season the soup with pepper to taste.
- 30. Adjust the flavor with a little pickle juice.
- 31. Place a dollop of sour cream on each serving of Soljanka.
- 32. Serve the Soljanka with whole grain rolls.
