🍽️ Crispy sausages with spiced sauerkraut

Ingredients
- 1 onion
- 5 tbsp clarified butter
- 600 g sauerkraut
- 200 ml dry white wine
- 200 ml meat broth
- 1 bay leaf
- 1 tbsp juniper berries
- 1 tsp peppercorns
- 20 small frying sausages (e.g. Nuremberg roast sausages)
- salt
Instructions
- 1. Peel the onion and cut it into fine cubes.
- 2. Heat one tablespoon of lard in a pan.
- 3. Fry the onion cubes in it until they are soft and translucent.
- 4. Add the sauerkraut to the pan.
- 5. Deglaze the kraut with the white wine and the broth.
- 6. Add the bay leaf, juniper berries, and peppercorns (optionally in a spice bag).
- 7. Let the sauerkraut simmer on low heat for about 20 minutes.
- 8. Heat the remaining lard in a separate pan.
- 9. Fry the sausages in it for about 5 minutes until crispy, turning them frequently.
- 10. Season the sauerkraut to taste with salt.
- 11. Remove the spices from the sauerkraut.
- 12. Serve the boiled sausages together with the sauerkraut.
- 13. Optionally serve potato pancakes with it as well.
