🍽️ Sauerkraut with White Sausage and Pretzel

Ingredients
- 1 onion
- 20 g ghee
- 600 g sauerkraut (can)
- 100 ml vegetable broth
- 100 ml dry white wine
- salt
- 1 tsp crushed caraway seeds
- 1 bay leaf
- 2 juniper berries
- 4 white sausage
- 4 salt sticks
- parsley (for garnish)
- 4 pretzels (for garnish)
- sweet mustard (to taste)
Instructions
- 1. Heat a pot and add the butter fat.
- 2. Peel the onion and cut it into fine cubes.
- 3. Sauté the onion cubes in the pot until they are soft.
- 4. Add the sauerkraut to the pot.
- 5. Pour the vegetable broth and white wine over the sauerkraut.
- 6. Season the mixture with salt.
- 7. Place cumin, bay leaf, and juniper berries in a spice bag.
- 8. Add the spice bag to the pot with the sauerkraut.
- 9. Let the sauerkraut simmer on low heat for about 30 minutes.
- 10. Fill a pot with water and bring it to a warm temperature.
- 11. Place the white sausages in the warm water.
- 12. Warm the white sausages in the water for 5 minutes.
- 13. Remove the white sausages from the water and set them aside.
- 14. Peel the skin off the white sausages.
- 15. Slice the white sausages.
- 16. Thread three slices of white sausage onto a pretzel stick each.
- 17. Place the finished sauerkraut into jars.
- 18. Garnish the sauerkraut with parsley.
- 19. Place the pretzel stick with the white sausage pieces over the sauerkraut.
- 20. Serve the salt pretzel and sweet mustard alongside.
