🍽️ Colorful Sauerkraut Stew with Bay Leaves

Ingredients
- 1 onion
- 1 tbsp ghee
- 800 g sauerkraut
- 150 ml dry white wine
- 250 ml meat broth
- 2 fresh bay leaves
- 1 tsp juniper berry
- salt
- cumin (ground)
- pepper (from the mill)
Instructions
- 1. Peel the onion and cut it in half.
- 2. Cut the onion halves into thin strips.
- 3. Heat the lard in a pot.
- 4. Fry the onion strips for 1 to 2 minutes until they are soft and translucent.
- 5. Take the sauerkraut out of the package and squeeze it well so it is not too wet.
- 6. Add the drained sauerkraut to the pot with the onion.
- 7. Deglaze the mixture with the wine.
- 8. Pour in some broth.
- 9. Add the bay leaves and juniper berries to the kraut.
- 10. Cover the pot with a lid.
- 11. Let the sauerkraut simmer on low heat for about 40 minutes.
- 12. Stir the kraut occasionally.
- 13. Add a little more broth if it becomes too dry.
- 14. Season the finished sauerkraut with salt, cumin, and pepper to taste.
- 15. Serve the dish warm.
