  1. 1. If the sauerkraut tastes too sour, rinse it briefly under running water and then squeeze it well.
  2. 2. Peel the apple and the shallots, grate both ingredients finely, and mix them immediately with the sauerkraut.
  3. 3. Whisk together the lemon juice, horseradish, sugar, salt, pepper, 1 tablespoon of lemon juice, and the oil to make a dressing, add it to the sauerkraut, mix everything well, and let the mixture infuse for a short time.
  4. 4. Peel the grapefruit and the orange with a sharp knife, remove all white pith, and cut out nice fillets along the membranes, catch the released juice, and stir it into the sauerkraut.
  5. 5. Use a small melon baller to scoop out balls from the melon and fold them into the sauerkraut.
  6. 6. Fry the shrimp in hot butter for 2 minutes on each side, season with the remaining lemon juice, salt, and pepper, and stir in the parsley.
  7. 7. Arrange the sauerkraut on a salad plate, decorate it with the orange and grapefruit fillets, and place the shrimp on top.
  8. 8. Serve the dish with baguette.
