🍽️ Sauerkraut with Fruits and Shrimp

Ingredients
- 400 g fresh sauerkraut
- 2 shallots
- 1 tart apple
- 0.5 lemon (juice)
- 1 tbsp freshly grated horseradish (or from a jar)
- 2 tsp sugar
- 4 tbsp germ oil
- salt
- pepper (from the mill)
- 1 pink grapefruit
- 1 orange
- 0.25 honeydew melon
- 12 shrimp (cooked and peeled)
- 1 tbsp butter
- 1 clove of garlic
- 1 tbsp parsley (finely chopped)
Instructions
- 1. If the sauerkraut tastes too sour, rinse it briefly under running water and then squeeze it well.
- 2. Peel the apple and the shallots, grate both ingredients finely, and mix them immediately with the sauerkraut.
- 3. Whisk together the lemon juice, horseradish, sugar, salt, pepper, 1 tablespoon of lemon juice, and the oil to make a dressing, add it to the sauerkraut, mix everything well, and let the mixture infuse for a short time.
- 4. Peel the grapefruit and the orange with a sharp knife, remove all white pith, and cut out nice fillets along the membranes, catch the released juice, and stir it into the sauerkraut.
- 5. Use a small melon baller to scoop out balls from the melon and fold them into the sauerkraut.
- 6. Fry the shrimp in hot butter for 2 minutes on each side, season with the remaining lemon juice, salt, and pepper, and stir in the parsley.
- 7. Arrange the sauerkraut on a salad plate, decorate it with the orange and grapefruit fillets, and place the shrimp on top.
- 8. Serve the dish with baguette.
