🍲 Hearty Sauerkraut Potato Stew with Veggie Sausages

Ingredients
- 600 g mostly waxy potatoes (in organic quality)
- 2 carrots (in organic quality)
- 1 onion (in organic quality)
- 2 tbsp rapeseed oil (in organic quality; available at Reformhaus®)
- 1 tbsp tomato paste (15 g; in organic quality; available at Reformhaus®)
- 800 ml vegetable broth (in organic quality; available at Reformhaus®)
- salt
- pepper (in organic quality; available at Reformhaus®)
- 0.5 tsp sweet paprika powder (in organic quality; available at Reformhaus®)
- 1 handful parsley (5 g; in organic quality; available at Reformhaus®)
- 5 vegetarian sausages (in organic quality; available at Reformhaus®)
- 200 g EDEN fresh food (+)- sauerkraut (available at Reformhaus®)
- 100 g sour cream (10 % fat; in organic quality; available at Reformhaus®)
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Peel the carrots and wash them as well.
- 3. Cut the potatoes and carrots into cubes of about 1 cm.
- 4. Peel the onion and chop it finely.
- 5. Heat the oil in a large pot.
- 6. Sauté the onions in it for about 1 minute over medium heat.
- 7. Add the potato and carrot cubes along with the tomato paste to the pot.
- 8. Fry the mixture for another 3 minutes.
- 9. Pour in the broth.
- 10. Let the stew simmer covered on low heat for 20 minutes.
- 11. Check if the potatoes and carrots are soft.
- 12. Season the stew finally with salt, pepper, and paprika powder.
- 13. Slice the veggie sausages.
- 14. Heat the remaining oil in a frying pan.
- 15. Fry the sausage slices for 5 minutes until golden brown over medium heat.
- 16. Wash the parsley and shake it dry.
- 17. Pluck the leaves from the stems and chop them finely.
- 18. Add the sauerkraut to the stew 5 minutes before the end of the cooking time.
- 19. Let the sauerkraut warm up in the stew.
- 20. Divide the stew among plates.
- 21. Garnish with the fried sausages, a dollop of sour cream, and the fresh parsley.
