  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Peel the carrots and wash them as well.
  3. 3. Cut the potatoes and carrots into cubes of about 1 cm.
  4. 4. Peel the onion and chop it finely.
  5. 5. Heat the oil in a large pot.
  6. 6. Sauté the onions in it for about 1 minute over medium heat.
  7. 7. Add the potato and carrot cubes along with the tomato paste to the pot.
  8. 8. Fry the mixture for another 3 minutes.
  9. 9. Pour in the broth.
  10. 10. Let the stew simmer covered on low heat for 20 minutes.
  11. 11. Check if the potatoes and carrots are soft.
  12. 12. Season the stew finally with salt, pepper, and paprika powder.
  13. 13. Slice the veggie sausages.
  14. 14. Heat the remaining oil in a frying pan.
  15. 15. Fry the sausage slices for 5 minutes until golden brown over medium heat.
  16. 16. Wash the parsley and shake it dry.
  17. 17. Pluck the leaves from the stems and chop them finely.
  18. 18. Add the sauerkraut to the stew 5 minutes before the end of the cooking time.
  19. 19. Let the sauerkraut warm up in the stew.
  20. 20. Divide the stew among plates.
  21. 21. Garnish with the fried sausages, a dollop of sour cream, and the fresh parsley.
