🍽️ Classic Casserole with Sauerkraut, Potatoes, and Smoked Pork

Ingredients
- 600 g potatoes
- salt
- 120 ml warm milk
- 1 tbsp butter
- nutmeg
- 1 onion
- 2 tbsp vegetable oil
- 2 small bay leaves
- 1 tbsp caraway seeds
- 400 g sauerkraut (can)
- 500 g kasseler (cooked, boneless, sliced)
- 200 g sour cream
- pepper (from the mill)
- 0.5 bunch chives
Instructions
- 1. Preheat the oven to 180 degrees Celsius using top and bottom heat.
- 2. Peel the potatoes and wash them thoroughly.
- 3. Boil the potatoes in plenty of salted water for 30 minutes until tender.
- 4. Drain the cooking water and let the potatoes steam dry for a moment.
- 5. Press three quarters of the potatoes through a potato ricer.
- 6. Mix the pressed potatoes with milk, butter, and a pinch of nutmeg.
- 7. Roughly chop the remaining quarter of the potatoes.
- 8. Fold the roughly chopped potatoes into the mashed potato mixture.
- 9. Peel the onion and dice it into small pieces.
- 10. Sauté the onion cubes in hot oil until translucent.
- 11. Add bay leaves and caraway seeds to the onion mixture.
- 12. Add the sauerkraut.
- 13. Simmer the mixture for 5 minutes over low heat with the lid on.
- 14. Slice the smoked pork (Kasseler) into thin slices.
- 15. Layer the potato mixture, sauerkraut, and smoked pork alternately in a baking dish.
- 16. Season the sour cream with salt and pepper.
- 17. Pour the seasoned sour cream evenly over the casserole.
- 18. Bake the casserole in the preheated oven for about 35 minutes.
- 19. Chop the chives into small rings.
- 20. Sprinkle the finished casserole with the chopped chives.
- 21. Serve the casserole hot.
