  1. 1. Preheat the oven to 180 degrees Celsius using top and bottom heat.
  2. 2. Peel the potatoes and wash them thoroughly.
  3. 3. Boil the potatoes in plenty of salted water for 30 minutes until tender.
  4. 4. Drain the cooking water and let the potatoes steam dry for a moment.
  5. 5. Press three quarters of the potatoes through a potato ricer.
  6. 6. Mix the pressed potatoes with milk, butter, and a pinch of nutmeg.
  7. 7. Roughly chop the remaining quarter of the potatoes.
  8. 8. Fold the roughly chopped potatoes into the mashed potato mixture.
  9. 9. Peel the onion and dice it into small pieces.
  10. 10. Sauté the onion cubes in hot oil until translucent.
  11. 11. Add bay leaves and caraway seeds to the onion mixture.
  12. 12. Add the sauerkraut.
  13. 13. Simmer the mixture for 5 minutes over low heat with the lid on.
  14. 14. Slice the smoked pork (Kasseler) into thin slices.
  15. 15. Layer the potato mixture, sauerkraut, and smoked pork alternately in a baking dish.
  16. 16. Season the sour cream with salt and pepper.
  17. 17. Pour the seasoned sour cream evenly over the casserole.
  18. 18. Bake the casserole in the preheated oven for about 35 minutes.
  19. 19. Chop the chives into small rings.
  20. 20. Sprinkle the finished casserole with the chopped chives.
  21. 21. Serve the casserole hot.
