  2. 2. Cut the onion into small cubes.
  3. 3. Grate the carrots finely.
  4. 4. Heat oil in a large pan.
  5. 5. Sauté the onion cubes and grated carrots in the hot oil for 1 to 2 minutes.
  6. 6. Deglaze the pan with the wine.
  7. 7. Rinse the sauerkraut under cold water in a sieve.
  8. 8. Let the sauerkraut drain well.
  9. 9. Add the drained sauerkraut to the pan.
  10. 10. Add the bay leaf to the pan.
  11. 11. Season the mixture with salt, pepper, thyme, and cumin.
  12. 12. Simmer the kraut half-covered for about 15 minutes.
  13. 13. Remove the pan from the heat.
  14. 14. Remove the bay leaf from the mixture.
  15. 15. Finely chop the parsley and stir it into the kraut.
  16. 16. Adjust the seasoning of the filling with salt and pepper.
  17. 17. Let the sauerkraut filling cool down completely.
  18. 18. Preheat the oven to 200 degrees Celsius fan-forced.
  19. 19. Rinse the fish under running water.
  20. 20. Pat the fish dry with kitchen paper.

  22. 22. Lay out the puff pastry on the work surface.
  23. 23. Roll out the pastry to a thickness of about 3 millimeters.

  26. 26. Spread the cooled sauerkraut filling lengthwise in the center of the pastry.
  27. 27. Place the seasoned zander on top of the sauerkraut.
  28. 28. Fold the two long sides of the pastry over the filling.
  29. 29. Press the ends of the strudel firmly together to seal them.
  30. 30. Place the strudel on a baking sheet lined with baking paper.
  31. 31. Whisk the egg yolk with the cream until smooth.
  32. 32. Brush the surface of the strudel with the egg yolk and cream mixture.
  33. 33. Bake the strudel in the oven for 30 to 35 minutes until golden brown.
