🍽️ Crispy Fish Sauerkraut Strudel

Ingredients
- 2 Carrots
- 1 Onion
- 1 tbsp Vegetable oil
- 100 ml dry white wine
- 600 g Sauerkraut
- 1 Bay leaf
- Salt
- Pepper
- 0.5 tsp dried thyme
- Cumin (ground)
- 2 tbsp fresh chopped parsley
- 600 g Zander fillet (or cod)
- 350 g Puff pastry
- 2 tbsp melted butter
- 1 Egg yolk
Instructions
- 1. Peel the carrots and the onion.
- 2. Cut the onion into small cubes.
- 3. Grate the carrots finely.
- 4. Heat oil in a large pan.
- 5. Sauté the onion cubes and grated carrots in the hot oil for 1 to 2 minutes.
- 6. Deglaze the pan with the wine.
- 7. Rinse the sauerkraut under cold water in a sieve.
- 8. Let the sauerkraut drain well.
- 9. Add the drained sauerkraut to the pan.
- 10. Add the bay leaf to the pan.
- 11. Season the mixture with salt, pepper, thyme, and cumin.
- 12. Simmer the kraut half-covered for about 15 minutes.
- 13. Remove the pan from the heat.
- 14. Remove the bay leaf from the mixture.
- 15. Finely chop the parsley and stir it into the kraut.
- 16. Adjust the seasoning of the filling with salt and pepper.
- 17. Let the sauerkraut filling cool down completely.
- 18. Preheat the oven to 200 degrees Celsius fan-forced.
- 19. Rinse the fish under running water.
- 20. Pat the fish dry with kitchen paper.
- 21. Season the fish with salt and pepper.
- 22. Lay out the puff pastry on the work surface.
- 23. Roll out the pastry to a thickness of about 3 millimeters.
- 24. Whisk the melted butter.
- 25. Brush the pastry evenly with the butter.
- 26. Spread the cooled sauerkraut filling lengthwise in the center of the pastry.
- 27. Place the seasoned zander on top of the sauerkraut.
- 28. Fold the two long sides of the pastry over the filling.
- 29. Press the ends of the strudel firmly together to seal them.
- 30. Place the strudel on a baking sheet lined with baking paper.
- 31. Whisk the egg yolk with the cream until smooth.
- 32. Brush the surface of the strudel with the egg yolk and cream mixture.
- 33. Bake the strudel in the oven for 30 to 35 minutes until golden brown.
