🍰 Tart Cherry Cake with Lemon Glaze

Ingredients
- 1.2 kg pitted sour cherries
- 250 g soft butter
- 250 g sugar
- 1 pinch salt
- 4 eggs
- 2 tsp grated lemon zest
- 300 g flour
- 100 g cornstarch
- 2 tsp baking powder
- 50 g sour cream
- 125 g slivered almonds
- 2 tbsp coconut oil
- 150 powdered sugar
- 2 tbsp lemon juice
Instructions
- 1. Beat butter, sugar, a pinch of salt, the eggs, and the lemon zest with a hand mixer until the mixture is fluffy.
- 2. Add flour, cornstarch, and baking powder to the mixture and stir everything in.
- 3. Stir in the sour cream until the batter is smooth.
- 4. Line a baking sheet with baking paper or grease it and sprinkle with breadcrumbs.
- 5. Place the batter on the prepared baking sheet and spread it out evenly.
- 6. Distribute the tart cherries evenly over the batter.
- 7. Sprinkle slivered almonds over the cake.
- 8. Place the baking sheet into a cold oven on the middle rack.
- 9. Turn the oven to 200 degrees Celsius and bake the cake for about 50 minutes.
- 10. Remove the finished cake from the oven and let it cool completely.
- 11. Melt the fat for the glaze and let it cool down slightly.
- 12. Whisk the cooled fat with powdered sugar and lemon juice to form a smooth sauce.
- 13. Brush the glaze evenly over the cooled cake using a pastry brush.
