🍰 Classic Sour Cherry Cake

Ingredients
- 500 g sour cherries
- 4 tbsp sugar
- 250 g quark
- 0.125 l milk
- 125 g sugar
- 0.5 untreated lemon (zested rind)
- 2 eggs (separated)
- 80 g semolina
- 30 g butter
- breadcrumbs (for the pan)
Instructions
- 1. Grease a baking dish generously with butter.
- 2. Coat the dish evenly with breadcrumbs.
- 3. Preheat the oven to 200 degrees Celsius.
- 4. Mix the sour cherries with the sugar.
- 5. Press the quark through a fine sieve until it is completely smooth.
- 6. Beat the smooth quark together with the milk, lemon zest, and egg yolks until creamy.
- 7. Stir the semolina into the quark mixture.
- 8. Beat the egg whites until stiff.
- 9. Gently fold the stiff egg whites into the batter to keep it airy.
- 10. Fill half of the batter into the prepared dish.
- 11. Spread the cherries evenly over the batter.
- 12. Cover the cherries with the remaining batter.
- 13. Place small flakes of butter on top of the cake.
- 14. Bake the cake for 50 minutes in the oven until golden yellow.
