  1. 1. Wash the spring onions thoroughly.
  2. 2. Finely chop the white parts of the spring onions.
  3. 3. Slice the green parts of the spring onions into thin rings.
  4. 4. Wash the fava beans and let them drain well.
  5. 5. Bring plenty of water with salt to a boil.
  6. 6. Boil the fava beans for 5 to 6 minutes.
  7. 7. Add the finely chopped white parts of the spring onions to the beans during the last minutes of cooking.
  8. 8. Drain the beans and onions in a fine sieve.
  9. 9. Place the drained vegetables into a bowl.
  10. 10. Add the lemon juice.
  11. 11. Roughly chop the walnuts.
  12. 12. Lightly toast the walnuts in a pan without oil.
  13. 13. Remove the toasted nuts from the pan and set them aside.
  14. 14. Add the oil, the toasted nuts, and the lemon zest to the beans.
  15. 15. Mix all ingredients thoroughly.
  16. 16. Coarsely crumble the Parmesan over the top.
  17. 17. Fold the Parmesan into the mixture.
  18. 18. Season the salad with salt and pepper to taste.
  19. 19. Serve the salad in bowls.
  20. 20. Garnish the bowls with halved chives.
  21. 21. Serve the salad immediately.
