🍽️ Crispy Fava Bean Salad with Walnuts

Ingredients
- 3 spring onions
- 800 g fresh broad beans (shelled)
- salt
- 2 tbsp lemon juice
- 100 g walnut kernels
- 4 tbsp olive oil
- 2 tbsp lemon zest
- 75 g Parmesan (block)
- pepper (from the mill)
- chives (for garnishing)
Instructions
- 1. Wash the spring onions thoroughly.
- 2. Finely chop the white parts of the spring onions.
- 3. Slice the green parts of the spring onions into thin rings.
- 4. Wash the fava beans and let them drain well.
- 5. Bring plenty of water with salt to a boil.
- 6. Boil the fava beans for 5 to 6 minutes.
- 7. Add the finely chopped white parts of the spring onions to the beans during the last minutes of cooking.
- 8. Drain the beans and onions in a fine sieve.
- 9. Place the drained vegetables into a bowl.
- 10. Add the lemon juice.
- 11. Roughly chop the walnuts.
- 12. Lightly toast the walnuts in a pan without oil.
- 13. Remove the toasted nuts from the pan and set them aside.
- 14. Add the oil, the toasted nuts, and the lemon zest to the beans.
- 15. Mix all ingredients thoroughly.
- 16. Coarsely crumble the Parmesan over the top.
- 17. Fold the Parmesan into the mixture.
- 18. Season the salad with salt and pepper to taste.
- 19. Serve the salad in bowls.
- 20. Garnish the bowls with halved chives.
- 21. Serve the salad immediately.
