🍽️ Chicken Satay Skewers with Peanut Dip

Ingredients
- 150 g unsalted peeled peanuts (peeled peanuts)
- 200 ml coconut milk
- 2 tbsp peanut butter
- 0.5 lemon (squeezed)
- 1 pinch sugar
- 3 tbsp whipping cream
- 640 g chicken breast fillet (4 chicken breast fillets)
- 2 garlic cloves
- 1 cm ginger (finely chopped)
- 1 shallot (finely chopped)
- 1 pinch cumin (ground)
- 1 pinch coriander (ground)
- 2 tbsp light soy sauce
- 4 tbsp coconut milk
- 2 tbsp oil
- salt
- pepper (from the mill)
- 12 wooden skewers (soaked in water)
Instructions
- 1. Roast the peanuts in a pan without added fat over medium heat until they are light brown.
- 2. Let the roasted peanuts cool down completely.
- 3. Crush the cooled peanuts in a mortar until they form a fine powder.
- 4. Bring the coconut milk and peanut butter to a boil in a saucepan.
- 5. Stir the ground peanut powder and lemon juice into the hot mixture.
- 6. Season the sauce with sugar to taste.
- 7. Stir in cream gradually until the sauce reaches a creamy consistency.
- 8. Blend the sauce until it is completely smooth.
- 9. Let the finished sauce sit for a while to allow the flavors to meld.
- 10. Cut the chicken fillets into strips that are about 2 centimeters wide and thin.
- 11. Whisk the remaining ingredients for the marinade in a bowl.
- 12. Place the meat strips in the marinade and toss them to ensure they are well coated.
- 13. Cover the bowl and let the meat marinate in the refrigerator for at least 2 hours.
- 14. Remove the meat strips from the marinade and let them drain briefly.
- 15. Thread the meat strips onto 8 to 16 prepared wooden skewers in a wavy pattern.
- 16. Lightly oil the grill grate.
- 17. Grill the skewers on the oiled grate for about 8 to 10 minutes.
- 18. Turn the skewers occasionally while grilling to ensure even cooking.
- 19. Brush the skewers with the remaining marinade if desired.
- 20. Arrange the finished skewers in a serving dish.
- 21. Serve the skewers together with the prepared peanut dip.
