  2. 2. Salt the water and add mirin and rice vinegar.
  3. 3. Remove the pot from the heat so the water stops boiling vigorously.
  4. 4. Remove the scallop meat from the shell and remove the roe if present.
  5. 5. Place the scallop meat in the hot water for 30 seconds.
  6. 6. Remove the scallops and let them cool down.
  7. 7. Add the shrimp to the nearly boiling water.
  8. 8. Cook the shrimp for 1 minute.
  9. 9. Remove the shrimp and rinse them under cold water to stop the cooking.
  10. 10. Let the shrimp drain well.
  11. 11. Bring the broth in the pot back to a boil.
  12. 12. Cook the squid over low heat for 1 to 2 minutes, depending on the thickness of the pieces.
  13. 13. Remove the squid and let it drain and cool down.
  14. 14. Wash the spinach and place it damp in a pot.
  15. 15. Let the spinach wilt.
  16. 16. Place the spinach in a sieve and let it drain.
  17. 17. Wash the cucumber.
  18. 18. Slice the cucumber into 5 to 10 mm thick slices.
