🍽️ Fresh Sashimi with Salmon, Scallops, and Squid

Ingredients
- Salt
- 1 tbsp Mirin
- 1 tbsp Rice vinegar
- 4 Scallops
- 8 Shrimp (with head and legs)
- 200 g Squid (kitchen-ready)
- 200 g fresh Spinach
- 1 piece Cucumber (approx. 10 cm)
- 200 g fresh Salmon fillet
- 2 thin slices Lemon
- 1 piece Leek (from the light green center)
- Wasabi
- Pickled ginger (sliced) for garnishing
- Trout roe (for garnishing)
- Soy sauce (for serving)
Instructions
- 1. Bring about 1 liter of water to a boil in a pot.
- 2. Salt the water and add mirin and rice vinegar.
- 3. Remove the pot from the heat so the water stops boiling vigorously.
- 4. Remove the scallop meat from the shell and remove the roe if present.
- 5. Place the scallop meat in the hot water for 30 seconds.
- 6. Remove the scallops and let them cool down.
- 7. Add the shrimp to the nearly boiling water.
- 8. Cook the shrimp for 1 minute.
- 9. Remove the shrimp and rinse them under cold water to stop the cooking.
- 10. Let the shrimp drain well.
- 11. Bring the broth in the pot back to a boil.
- 12. Cook the squid over low heat for 1 to 2 minutes, depending on the thickness of the pieces.
- 13. Remove the squid and let it drain and cool down.
- 14. Wash the spinach and place it damp in a pot.
- 15. Let the spinach wilt.
- 16. Place the spinach in a sieve and let it drain.
- 17. Wash the cucumber.
- 18. Slice the cucumber into 5 to 10 mm thick slices.
- 19. Cut the cucumber slices diagonally into sticks.
- 20. Slice the salmon fillet diagonally into 4 slices.
- 21. Halve the lemon slices.
- 22. Fold each salmon slice approximately in the middle.
- 23. Place a half lemon slice into the fold.
- 24. Wash the leek.
- 25. Cut the leek into 4 rings with a width of 1 to 2 cm.
- 26. Separate the outer light green ring from each leek ring.
- 27. Use the rest of the leek for other dishes.
- 28. Cut the leek rings on one side in a zigzag pattern.
- 29. Lay the leek rings flat.
- 30. Place about 1 to 2 cm high of wasabi paste on a plate.
- 31. Place a leek strip around the wasabi paste.
- 32. Press the leek strip slightly.
- 33. Repeat this to make a total of 4 wasabi crowns.
- 34. Slice the squid lengthwise into slices.
- 35. Place 2 shrimp on a plate.
- 36. Place 1 scallop on the plate.
- 37. Place a salmon slice with lemon on the plate.
- 38. Add some cucumber sticks to the plate.
- 39. Place several squid slices on loosely arranged spinach leaves.
- 40. Position some pickled ginger on the plate.
- 41. Place 1 wasabi crown on the plate.
- 42. Garnish the squid with some caviar.
- 43. Serve the soy sauce separately.
