🍽️ Fresh Sardine Rolls with Herbs

Ingredients
- 12 sardine fillets (kitchen-ready)
- 1 shallot
- 1 garlic clove
- 1 red chili pepper
- 2 handful mixed herbs (parsley and cilantro)
- 3 tbsp olive oil
- 0.5 tsp organic lemon zest
- salt
- pepper (from the mill)
- 1 tbsp lemon juice
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Rinse the sardines briefly and pat them dry with a kitchen towel.
- 3. Place the fish on a work surface with the skin side facing down.
- 4. Peel the shallot and garlic and dice them finely.
- 5. Wash the chili pepper, cut it in half lengthwise, remove the seeds, and dice it finely.
- 6. Wash the herbs, pat them dry, pick off the leaves, and chop them coarsely.
- 7. Heat 1 tablespoon of oil in a pan and sauté the shallot, garlic, and chili until translucent.
- 8. Remove the pan from the heat and stir the chopped herbs and lemon zest into the mixture.
- 9. Season the filling with salt and pepper to taste.
- 10. Distribute the herb filling evenly over the sardines.
- 11. Roll the sardines up tightly and secure them with toothpicks.
- 12. Place the rolls in a baking dish lightly greased with oil.
- 13. Season the sardine rolls on the outside once more with salt and pepper.
- 14. Bake the rolls in the preheated oven for 10-12 minutes until the fish is cooked through.
- 15. Drizzle some lemon juice and olive oil over the finished rolls before serving.
