🍽️ Grilled Sardines with Homemade Rosemary Salt

Ingredients
- 12 sardines
- pepper (from the mill)
- lemon juice
- olive oil
- 12 slices white bread (or ciabatta)
- 1 sprig rosemary
- 150 g sea salt
Instructions
- 1. Preheat your grill to medium-high heat.
- 2. Rinse the sardines under cold running water.
- 3. Pat the fish completely dry with a kitchen towel.
- 4. Remove the heads and fins from the sardines.
- 5. Butterfly the fish by opening them along the belly and lay them flat.
- 6. Carefully loosen and remove the central backbone.
- 7. Season the fillets on both sides with black pepper.
- 8. Drizzle the fish with a little lemon juice.
- 9. Add a splash of olive oil over the sardines.
- 10. Place the sardines on the hot grill.
- 11. Grill the fish for about three minutes on the first side.
- 12. Turn the sardines and grill for another three minutes.
- 13. Place the bread slices on the grill at the same time.
- 14. Toast the bread until golden brown on both sides.
- 15. Rinse the rosemary sprigs under cold running water.
- 16. Shake the sprigs dry so no water remains.
- 17. Strip the rosemary needles from the stems using your fingers.
- 18. Finely chop the needles with a knife.
- 19. Place the chopped rosemary and salt into a mortar.
- 20. Grind the mixture finely until well combined.
- 21. Place the grilled sardine fillets onto the toasted bread slices.
- 22. Sprinkle the fish generously with the rosemary salt.
- 23. Plate the dish and serve immediately.
