  1. 1. Preheat your grill to medium-high heat.
  2. 2. Rinse the sardines under cold running water.
  3. 3. Pat the fish completely dry with a kitchen towel.
  4. 4. Remove the heads and fins from the sardines.
  5. 5. Butterfly the fish by opening them along the belly and lay them flat.
  6. 6. Carefully loosen and remove the central backbone.
  7. 7. Season the fillets on both sides with black pepper.
  8. 8. Drizzle the fish with a little lemon juice.
  9. 9. Add a splash of olive oil over the sardines.
  10. 10. Place the sardines on the hot grill.
  11. 11. Grill the fish for about three minutes on the first side.
  12. 12. Turn the sardines and grill for another three minutes.
  13. 13. Place the bread slices on the grill at the same time.
  14. 14. Toast the bread until golden brown on both sides.
  15. 15. Rinse the rosemary sprigs under cold running water.
  16. 16. Shake the sprigs dry so no water remains.
  17. 17. Strip the rosemary needles from the stems using your fingers.
  18. 18. Finely chop the needles with a knife.
  19. 19. Place the chopped rosemary and salt into a mortar.
  20. 20. Grind the mixture finely until well combined.
  21. 21. Place the grilled sardine fillets onto the toasted bread slices.
  22. 22. Sprinkle the fish generously with the rosemary salt.
  23. 23. Plate the dish and serve immediately.
