🍽️ Grilled Sardines with Chard

Ingredients
- 8 kitchen-ready sardines (approx. 180 g each)
- 1 lemon
- 300 g chard
- 1 tbsp butter
- 2 tbsp chopped parsley
- 3 garlic cloves
- 2 tbsp pine nuts
- 1 tbsp capers
- 1 tbsp raisins
- 100 ml olive oil
- salt
- pepper from the mill
Instructions
- 1. Peel the garlic cloves.
- 2. Roughly chop two of the cloves.
- 3. Place the parsley, chopped garlic, one tablespoon of pine nuts, capers, raisins, and oil into a blender.
- 4. Blend the ingredients until smooth.
- 5. Season the marinade with salt and pepper.
- 6. Rinse the sardines under running water.
- 7. Pat the fish dry with a kitchen towel.
- 8. Drizzle some of the marinade over the sardines.
- 9. Wash the lemon thoroughly.
- 10. Slice the lemon into thin rounds.
- 11. Place the lemon slices on top of the fish.
- 12. Let the fish marinate for about one hour.
- 13. Rinse the chard under running water.
- 14. Remove the tough white ends of the stems.
- 15. Cut the green leaves into thin strips.
- 16. Remove the sardines from the marinade.
- 17. Place the fish along with the lemon slices on the grill.
- 18. Grill the sardines over medium heat for about four minutes per side.
- 19. Brush the fish with a little marinade repeatedly while grilling.
- 20. Heat the butter in a frying pan.
- 21. Add the remaining pine nuts and the pressed garlic to the pan.
- 22. Sauté the ingredients briefly.
- 23. Add the chard strips to the pan.
- 24. Steam the chard for about three minutes.
- 25. Season the chard with salt and pepper.
- 26. Serve the grilled sardines together with the chard.
