  1. 1. Peel the garlic cloves.
  2. 2. Press the garlic into a small bowl using a garlic press.
  3. 3. Add the egg yolk, salt, and pepper to the bowl.
  4. 4. Whisk the ingredients vigorously with a whisk.
  5. 5. Drizzle the olive oil slowly into the mixture while continuing to whisk.
  6. 6. Increase the flow of oil to a thin stream until the sauce is thick and creamy.
  7. 7. Stir the lemon juice into the finished sauce.
  8. 8. Season the sauce with salt and pepper to taste.
  9. 9. Cover the bowl and refrigerate until you need it.
  10. 10. Rinse the sardines under running water.
  11. 11. Remove the guts from the fish.
  12. 12. Pat the sardines dry with a kitchen towel.
  13. 13. Place one thyme sprig inside the belly cavity of each fish.
  14. 14. Finely chop the remaining thyme leaves.
  15. 15. Mix the chopped herbs with a little olive oil.
  16. 16. Season the fish with salt and pepper.
  17. 17. Brush the fish with the thyme oil.
  18. 18. Lightly oil the grill grate.
  19. 19. Place the sardines on the hot grill grate.
  20. 20. Grill the fish over medium heat for about 2 to 3 minutes per side.
  21. 21. Arrange the grilled fish on a platter.
  22. 22. Serve the sardines together with the prepared aioli.
