🍽️ Grilled Sardines with Fresh Garlic Cream

Ingredients
- 6 garlic cloves
- 2 egg yolks
- salt
- pepper (from the mill)
- 200 ml olive oil
- 1 tsp lemon juice
- 16 sardines (ready for the kitchen, approx. 50 g each)
- 4 tbsp olive oil
- 1 bunch thyme
- 4 tbsp lemon juice
- salt
- pepper (from the mill)
- oil (for the grill grate)
Instructions
- 1. Peel the garlic cloves.
- 2. Press the garlic into a small bowl using a garlic press.
- 3. Add the egg yolk, salt, and pepper to the bowl.
- 4. Whisk the ingredients vigorously with a whisk.
- 5. Drizzle the olive oil slowly into the mixture while continuing to whisk.
- 6. Increase the flow of oil to a thin stream until the sauce is thick and creamy.
- 7. Stir the lemon juice into the finished sauce.
- 8. Season the sauce with salt and pepper to taste.
- 9. Cover the bowl and refrigerate until you need it.
- 10. Rinse the sardines under running water.
- 11. Remove the guts from the fish.
- 12. Pat the sardines dry with a kitchen towel.
- 13. Place one thyme sprig inside the belly cavity of each fish.
- 14. Finely chop the remaining thyme leaves.
- 15. Mix the chopped herbs with a little olive oil.
- 16. Season the fish with salt and pepper.
- 17. Brush the fish with the thyme oil.
- 18. Lightly oil the grill grate.
- 19. Place the sardines on the hot grill grate.
- 20. Grill the fish over medium heat for about 2 to 3 minutes per side.
- 21. Arrange the grilled fish on a platter.
- 22. Serve the sardines together with the prepared aioli.
