  2. 2. Thoroughly dry the fish with a kitchen towel.
  3. 3. Season the inside of the sardines with salt and pepper.
  4. 4. Rinse the thyme sprigs and shake them dry.
  5. 5. Stuff the thyme sprigs into the hollowed-out sardines.
  6. 6. Season the outside of the fish with salt and pepper as well.
  7. 7. Drizzle some olive oil over the seasoned sardines.
  8. 8. Place the fish on the hot grill.
  9. 9. Grill the sardines for about 10 minutes.
  10. 10. Turn the fish occasionally while grilling.
  11. 11. Arrange the finished sardines on a platter or plates.
  12. 12. Garnish the dish with lemon wedges.
  13. 13. Serve the sardines immediately.
