  1. 1. Rinse the sardines under running water and pat them thoroughly dry with a kitchen towel.
  2. 2. Soak the bread rolls in a small amount of warm water.
  3. 3. Wash the spinach, remove the tough stems, and add the greens to boiling salted water. Cook for about 1 minute, immediately shock it with cold water, squeeze it well, and then chop it coarsely.
  4. 4. Squeeze the soaked bread roll and mix it with the spinach, garlic, basil, egg, and Parmesan. Finally, season the mixture with salt and pepper.
  5. 5. Stuff the sardines with this filling and place them side by side in a baking dish. Drizzle them with olive oil, sprinkle with a little sea salt, and bake in the preheated oven at 200°C fan-forced for approx. 15-20 minutes until golden brown. Serve immediately, garnished with fresh basil.
  6. 6. Roasted baguette goes very well with this.
