🍽️ Sardines stuffed with spinach

Ingredients
- 800 g sardine (ready for the kitchen, headless)
- 200 g spinach
- 1 roll (from the previous day)
- 2 garlic cloves (chopped)
- 0.5 bunch basil (chopped)
- 1 egg
- 50 g parmesan (grated)
- 2 tbsp olive oil
- 1 tbsp pine nuts
- sea salt
- pepper (from the mill)
- basil (for garnish)
Instructions
- 1. Rinse the sardines under running water and pat them thoroughly dry with a kitchen towel.
- 2. Soak the bread rolls in a small amount of warm water.
- 3. Wash the spinach, remove the tough stems, and add the greens to boiling salted water. Cook for about 1 minute, immediately shock it with cold water, squeeze it well, and then chop it coarsely.
- 4. Squeeze the soaked bread roll and mix it with the spinach, garlic, basil, egg, and Parmesan. Finally, season the mixture with salt and pepper.
- 5. Stuff the sardines with this filling and place them side by side in a baking dish. Drizzle them with olive oil, sprinkle with a little sea salt, and bake in the preheated oven at 200°C fan-forced for approx. 15-20 minutes until golden brown. Serve immediately, garnished with fresh basil.
- 6. Roasted baguette goes very well with this.
