  2. 2. Remove the tough stem bases from the leaves.
  3. 3. Place the leaves in cold water for 10 minutes.
  4. 4. Rinse the leaves briefly.
  5. 5. Let the water drain from the leaves.
  6. 6. Pat the leaves dry with a kitchen towel.
  7. 7. Peel the shallot.
  8. 8. Chop the shallot very finely.
  9. 9. Wash the sardines thoroughly.
  10. 10. Pat the sardines dry.
  11. 11. Season the sardines inside and out with salt.

  13. 13. Sprinkle the insides of the fish with the chopped shallots.
