🍽️ Sardines in Grape Leaf Grill Parcels

Ingredients
- 16 large grape leaves (pickled)
- 16 fresh sardines (approx. 1.2 kg, cleaned and scaled)
- salt
- pepper (from the mill)
- 1 shallot
- 0.5 tsp cumin (ground)
- 6 tbsp olive oil
- lemon juice
- 1 lemon
Instructions
- 1. Carefully separate the grape leaves from each other.
- 2. Remove the tough stem bases from the leaves.
- 3. Place the leaves in cold water for 10 minutes.
- 4. Rinse the leaves briefly.
- 5. Let the water drain from the leaves.
- 6. Pat the leaves dry with a kitchen towel.
- 7. Peel the shallot.
- 8. Chop the shallot very finely.
- 9. Wash the sardines thoroughly.
- 10. Pat the sardines dry.
- 11. Season the sardines inside and out with salt.
- 12. Season the sardines inside and out with pepper.
- 13. Sprinkle the insides of the fish with the chopped shallots.
- 14. Sprinkle the insides of the fish with the cumin.
- 15. Place the fish side by side in a shallow dish.
- 16. Whisk the olive oil with the lemon juice.
- 17. Whisk the oil-lemon mixture with salt.
- 18. Whisk the oil-lemon mixture with pepper.
- 19. Drizzle the fish with the marinade.
- 20. Cover the dish.
- 21. Place the dish in the refrigerator for 30 minutes.
- 22. Preheat your grill to the desired temperature.
- 23. Lay the grape leaves shiny side down on a clean work surface.
- 24. Brush each leaf thinly with the marinade.
- 25. Place a fish on each leaf.
- 26. Roll the leaf tightly around the fish.
- 27. Place the parcels seam-side down on the grill.
- 28. Grill the parcels for about 8 minutes.
- 29. Turn the parcels several times during grilling.
- 30. Brush the parcels repeatedly with the marinade during grilling.
- 31. Open the parcels to serve.
- 32. Garnish the sardines with lemon wedges.
