🍽️ Crispy Sardines with Aromatic Garlic-Fennel Oil

Ingredients
- 8 fresh kitchen-ready anchovies
- salt
- pepper (from the mill)
- 2 tbsp fennel seeds
- 2 garlic cloves
- olive oil
Instructions
- 1. Rinse the sardines under cold water.
- 2. Gently pat the fish dry with a kitchen towel.
- 3. Season the sardines with salt and pepper.
- 4. Peel the garlic clove.
- 5. Cut the garlic into very small cubes.
- 6. Heat four tablespoons of oil in a frying pan.
- 7. Fry the sardines on each side for about two to three minutes until golden brown.
- 8. Remove the cooked sardines from the pan.
- 9. Place them on kitchen paper to absorb excess fat.
- 10. Add two more tablespoons of oil to the same pan.
- 11. Fry the diced garlic pieces and the fennel seeds in it.
- 12. Continue frying until the garlic is golden yellow.
- 13. Remove the pan from the heat.
- 14. Drizzle the sardines with the garlic-fennel oil.
- 15. Taste the sardines and adjust seasoning with salt and pepper if needed.
- 16. Serve the dish with green salad and raw fennel.
