  1. 1. Rinse the sardines under cold water.
  2. 2. Gently pat the fish dry with a kitchen towel.
  3. 3. Season the sardines with salt and pepper.
  4. 4. Peel the garlic clove.
  5. 5. Cut the garlic into very small cubes.
  6. 6. Heat four tablespoons of oil in a frying pan.
  7. 7. Fry the sardines on each side for about two to three minutes until golden brown.
  8. 8. Remove the cooked sardines from the pan.
  9. 9. Place them on kitchen paper to absorb excess fat.
  10. 10. Add two more tablespoons of oil to the same pan.
  11. 11. Fry the diced garlic pieces and the fennel seeds in it.
  12. 12. Continue frying until the garlic is golden yellow.
  13. 13. Remove the pan from the heat.
  14. 14. Drizzle the sardines with the garlic-fennel oil.
  15. 15. Taste the sardines and adjust seasoning with salt and pepper if needed.
  16. 16. Serve the dish with green salad and raw fennel.
