  1. 1. Open the can of tuna and drain the water or oil completely.
  2. 2. Take the tuna out of the can and mash it into small pieces with a fork.
  3. 3. Wash the lettuce leaves under running water.
  4. 4. Gently dry the leaves with a kitchen towel.
  5. 5. Tear the lettuce leaves into small, bite-sized pieces.
  6. 6. Wash the tomatoes thoroughly.
  7. 7. Cut the tomatoes into four equal quarters.
  8. 8. Remove the hard core and seeds from the tomato quarters.
  9. 9. Cut the remaining tomato flesh into very small cubes.
  10. 10. Wash the celery stalks under running water.
  11. 11. Remove the tough fibers and the frayed end of the stalk.
  12. 12. Dice the celery into very fine small cubes.
  13. 13. Save a few of the fine celery leaves for decoration.
  14. 14. Finely chop the remaining celery leaves.
  15. 15. Put the crème fraîche into a large mixing bowl.
  16. 16. Squeeze the juice of half a lemon into the crème fraîche.
  17. 17. Whisk the crème fraîche and lemon juice together well.
  18. 18. Peel a clove of garlic and remove the sprouts.
  19. 19. Press the garlic directly into the sauce.
  20. 20. Add the crushed tuna to the sauce.
  21. 21. Add the diced tomatoes to the bowl.
  22. 22. Add the fine celery cubes to the bowl.
  23. 23. Add the finely chopped celery greens to the bowl.
  24. 24. Save a few of the fine celery leaves for decoration.
  25. 25. Finely chop the remaining celery leaves.
  26. 26. Season the entire mixture with salt to taste.
  27. 27. Season the mixture with freshly ground pepper to taste.
  28. 28. Take four slices of bread.
  29. 29. Top each slice of bread with the prepared lettuce leaves.
  30. 30. Distribute the tuna vegetable mixture evenly over the lettuce.
  31. 31. Place the remaining bread slices on top as lids for the sandwiches.
  32. 32. Cut each sandwich diagonally in half.
  33. 33. Serve the sandwiches immediately.
