  1. 1. Wash the radishes, remove the stems, pat them dry, and slice them thinly.
  2. 2. Mix the cream cheese and quark in a bowl. Season the mixture with salt, pepper, the grated zest of the lemon, the lemon juice, a few drops of Tabasco, and a pinch of sugar. Stir everything well and finally taste to see if the spices are to your liking.
  3. 3. Slice the bread, but be careful not to cut all the way through the bottom layer so that the slices remain connected.
  4. 4. Cut the cress off the stems with a knife.
  5. 5. Spread a portion of the cream cheese mixture between every second slice of bread. Then place the radish slices, the smoked salmon, and the cress on top of these spread slices.
