🍽️ Whole grain toast sandwich with mozzarella, tomato and arugula

Ingredients
- 2 balls Mozzarella (125 g each)
- Salt
- Pepper (from the mill)
- 4 vine tomatoes
- 1 handful Arugula
- 60 g black olives (pitted)
- 8 slices Sandwich bread
- 2 tbsp Olive oil
- 2 tbsp Balsamic cream
Instructions
- 1. Slice the mozzarella into thin slices.
- 2. Season the cheese slices with a pinch of salt and freshly ground pepper.
- 3. Wash the tomatoes thoroughly under running water.
- 4. Slice the washed tomatoes into thin slices as well.
- 5. Wash the arugula (a type of leafy green) under cold water.
- 6. Shake the arugula dry, for example in a salad spinner or with a kitchen towel.
- 7. Halve the olives lengthwise.
- 8. Toast the bread slices until crisp in a toaster or in a pan.
- 9. Set aside four of the toast slices.
- 10. Drizzle these four slices evenly with the olive oil.
- 11. Layer the dry arugula on top of the oiled bread surface.
- 12. Place the seasoned mozzarella slices evenly on top of the arugula.
- 13. Distribute the tomato slices evenly over the cheese.
- 14. Finally, drizzle the filled slices with the balsamic cream.
- 15. Cover the filled toast slices with the remaining unspread bread slices.
