🍽️ Classic Boiled Potatoes with Mojo Chili Dip

Ingredients
- 2 kg small potatoes
- 100 g coarse sea salt
- 2 green chili peppers
- 4 garlic cloves
- coriander (1/2 bunch each)
- parsley (1/2 bunch each)
- salt
- 0.25 tsp ground cumin
- 3 tbsp mustard
- 100 ml olive oil
- 4 tbsp red wine vinegar
Instructions
- 1. Wash the potatoes thoroughly and place them in a pot. Cover them with enough water, add salt, and cook them for about 25 minutes.
- 2. Core and wash the chili peppers. Peel the garlic. Wash the herbs, shake them dry, pluck off the leaves, and chop everything roughly. Add the remaining ingredients and blend the mixture finely. Season to taste at the end.
- 3. Drain the potatoes and let them sit in the pot until the remaining water has evaporated. The potatoes should now look dry and slightly wrinkled.
- 4. Serve the potatoes together with the Mojo Chili sauce.
