  1. 1. Ensure that you use a ratio of three parts salt to one part of the remaining ingredients (herbs, spices, lemon zest).
  2. 2. Choose the amounts of herbs according to your taste. As a rough guideline: use less rosemary and more lemon zest, up to the largest amounts of the main herbs. The total amount of herbs and spices should be 100 grams.
  3. 3. Remove the hard stems and stalks from the fresh herbs.
  4. 4. Grind the spices, mustard seeds, and sesame seeds finely in a mortar.
  5. 5. Put the ground spice, the salt, and the prepared herbs into a food processor.
  6. 6. Pulverize everything in the mixer until fine.
  7. 7. Fill the finished herb salt immediately into jars.
  8. 8. Seal the jars airtight.
  9. 9. Store the salt in a dark place.
