  1. 1. Rinse the chicken meat under cold water.
  2. 2. Pat the meat completely dry with kitchen paper.
  3. 3. Place the meat between two layers of cling film.
  4. 4. Pound the meat flat until it is thin.
  5. 5. Cut the flat meat pieces in half.
  6. 6. Season the meat halves with salt and pepper.
  7. 7. Halve the ham slices.
  8. 8. Rinse the sage leaves briefly under running water.
  9. 9. Shake the sage leaves dry.
  10. 10. Carefully pluck the sage leaves from the stems.
  11. 11. Place a piece of ham on each piece of meat.
  12. 12. Place a sage leaf on top of the ham.
  13. 13. Secure the layers with a toothpick.
  14. 14. Heat oil in a large pan.
  15. 15. Fry the chicken pieces sharply on all sides.
  16. 16. Deglaze the meat with wine.
  17. 17. Pour in the meat stock (fond).
  18. 18. Simmer the sauce over medium heat for about 6 minutes.
  19. 19. Remove the chicken pieces from the pan.
  20. 20. Fill a plate with some pan sauce.
  21. 21. Place the saltimbocca on the sauce.
  22. 22. Serve the dish immediately.
