🍽️ Crispy Chicken Saltimbocca with Sage

Ingredients
- 8 chicken cutlets (kitchen-ready, á 100 g)
- salt
- pepper (from the mill)
- 8 slices prosciutto
- 16 sage leaves
- 2 tbsp olive oil
- 150 ml dry white wine
- 75 ml poultry stock
Instructions
- 1. Rinse the chicken meat under cold water.
- 2. Pat the meat completely dry with kitchen paper.
- 3. Place the meat between two layers of cling film.
- 4. Pound the meat flat until it is thin.
- 5. Cut the flat meat pieces in half.
- 6. Season the meat halves with salt and pepper.
- 7. Halve the ham slices.
- 8. Rinse the sage leaves briefly under running water.
- 9. Shake the sage leaves dry.
- 10. Carefully pluck the sage leaves from the stems.
- 11. Place a piece of ham on each piece of meat.
- 12. Place a sage leaf on top of the ham.
- 13. Secure the layers with a toothpick.
- 14. Heat oil in a large pan.
- 15. Fry the chicken pieces sharply on all sides.
- 16. Deglaze the meat with wine.
- 17. Pour in the meat stock (fond).
- 18. Simmer the sauce over medium heat for about 6 minutes.
- 19. Remove the chicken pieces from the pan.
- 20. Fill a plate with some pan sauce.
- 21. Place the saltimbocca on the sauce.
- 22. Serve the dish immediately.
