  2. 2. Cut each fillet diagonally into three equal strips.
  3. 3. Take the Parma ham slices.
  4. 4. Cut each ham slice once crosswise in the middle.
  5. 5. Take one chicken piece.
  6. 6. Season it with a pinch of salt and some pepper.
  7. 7. Place two fresh sage leaves on the meat.
  8. 8. Place half a piece of Parma ham on top.
  9. 9. Roll the meat up tightly.
  10. 10. Secure the roll with a toothpick.
  11. 11. Repeat this for all chicken pieces.
  12. 12. Add oil and butter to a large pan.
  13. 13. Heat the pan over medium heat.
  14. 14. Place the chicken rolls in the hot pan.
  15. 15. Fry the rolls for 3 to 4 minutes.
  16. 16. Turn the rolls regularly.
  17. 17. Fry them until they are golden brown and crispy on all sides.
