🍽️ Turkey Saltimbocca with Bran Filling

Ingredients
- 8 slices turkey cutlets (approx. 80 g each)
- 100 g cherry tomatoes
- 250 g cream cheese
- 3 tbsp oat bran
- salt
- pepper (from the mill)
- 2 sprigs sage
- vegetable oil (for frying)
Instructions
- 1. Rinse the turkey cutlets under cold water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Pound the cutlets flat with a meat mallet if necessary.
- 4. Wash the tomatoes thoroughly.
- 5. Cut the tomatoes into quarters.
- 6. Mix the cheese with the bran in a bowl.
- 7. Fold the tomato pieces into the cheese and bran mixture.
- 8. Season the filling with salt and pepper to taste.
- 9. Lay the turkey slices flat.
- 10. Pluck some fresh sage leaves from the stems.
- 11. Distribute the sage leaves over each cutlet.
- 12. Spread the cheese filling evenly over the meat.
- 13. Roll up the cutlets tightly.
- 14. Secure the rolls with toothpicks.
- 15. Season the outside of the rolls with salt and pepper.
- 16. Heat oil in a large frying pan.
- 17. Fry the rolls on all sides until golden brown over medium heat.
- 18. Ensure the total frying time is 6 to 8 minutes.
- 19. Serve the finished saltimbocca on a bed of spinach salad if desired.
