  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Pound the cutlets flat with a meat mallet if necessary.
  4. 4. Wash the tomatoes thoroughly.
  5. 5. Cut the tomatoes into quarters.
  6. 6. Mix the cheese with the bran in a bowl.
  7. 7. Fold the tomato pieces into the cheese and bran mixture.
  8. 8. Season the filling with salt and pepper to taste.
  9. 9. Lay the turkey slices flat.
  10. 10. Pluck some fresh sage leaves from the stems.
  11. 11. Distribute the sage leaves over each cutlet.
  12. 12. Spread the cheese filling evenly over the meat.
  13. 13. Roll up the cutlets tightly.
  14. 14. Secure the rolls with toothpicks.
  15. 15. Season the outside of the rolls with salt and pepper.
