🍽️ Tender Veal Cutlets with Ham and Sage

Ingredients
- 8 slices veal schnitzel (approx. 80 g each)
- 8 slices parma ham
- 8 sage leaves
- 1 tbsp butter
- salt
- pepper
- 125 ml sweet wine (Marsala)
Instructions
- 1. Rinse the veal cutlets under cold water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Pound the meat flat with the flat side of a meat mallet to tenderize it.
- 4. Place a slice of ham on each cutlet.
- 5. Place a fresh sage leaf on top of the ham.
- 6. Insert a small wooden skewer through the layers to hold everything together.
- 7. Melt one tablespoon of butter in a large frying pan.
- 8. Fry the cutlets for about 1 to 2 minutes on each side until golden brown.
- 9. Season the cutlets lightly with salt and pepper.
- 10. Remove the cutlets from the pan and set them aside.
- 11. Deglaze the pan drippings with the Marsala wine.
- 12. Bring the liquid in the pan to a vigorous boil.
- 13. Taste the sauce and adjust the seasoning if needed.
- 14. Place the cutlets back into the pan briefly so they heat through in the sauce.
- 15. Arrange the finished cutlets on pre-warmed plates.
- 16. Drizzle a spoonful of the pan sauce over each cutlet.
- 17. Serve the dish with side dishes of your choice, such as potatoes.
