🍽️ Crispy Sage Gnocchi

Ingredients
- 800 g potatoes
- 120 g flour
- 80 g Parmesan
- 2 eggs
- salt
- pepper (from the mill)
- nutmeg
- 10 g butter
- 250 g crème fraîche
- sage
Instructions
- 1. Peel the potatoes.
- 2. Boil the potatoes in water until they are tender.
- 3. Press the hot potatoes through a potato ricer.
- 4. Mix the potato mash with 40 grams of grated Parmesan.
- 5. Add the eggs to the potato mixture.
- 6. Season the mixture with salt, pepper, and a pinch of nutmeg.
- 7. Knead the ingredients into a smooth dough.
- 8. Roll the dough into finger-thick ropes.
- 9. Cut the ropes into pieces about 3 centimeters long.
- 10. Press small ridges into the gnocchi using the back of a fork.
- 11. Bring plenty of salted water to a gentle simmer.
- 12. Add the gnocchi to the hot water.
- 13. Cook the gnocchi until they float to the surface.
- 14. Melt butter in a deep pan until it foams slightly.
- 15. Stir in Creme Fraîche and the remaining grated Parmesan.
- 16. Season the sauce with salt and pepper.
- 17. Drain the gnocchi well.
- 18. Add the gnocchi to the pan.
- 19. Toss the gnocchi briefly in the sauce.
- 20. Garnish the gnocchi with fresh sage leaves.
- 21. Serve the gnocchi immediately.
