  1. 1. Peel the potatoes.
  2. 2. Boil the potatoes in water until they are tender.
  3. 3. Press the hot potatoes through a potato ricer.
  4. 4. Mix the potato mash with 40 grams of grated Parmesan.
  5. 5. Add the eggs to the potato mixture.
  6. 6. Season the mixture with salt, pepper, and a pinch of nutmeg.
  7. 7. Knead the ingredients into a smooth dough.
  8. 8. Roll the dough into finger-thick ropes.
  9. 9. Cut the ropes into pieces about 3 centimeters long.
  10. 10. Press small ridges into the gnocchi using the back of a fork.
  11. 11. Bring plenty of salted water to a gentle simmer.
  12. 12. Add the gnocchi to the hot water.
  13. 13. Cook the gnocchi until they float to the surface.
  14. 14. Melt butter in a deep pan until it foams slightly.
  15. 15. Stir in Creme Fraîche and the remaining grated Parmesan.
  16. 16. Season the sauce with salt and pepper.
  17. 17. Drain the gnocchi well.
  18. 18. Add the gnocchi to the pan.
  19. 19. Toss the gnocchi briefly in the sauce.
  20. 20. Garnish the gnocchi with fresh sage leaves.
  21. 21. Serve the gnocchi immediately.
