🍽️ Crispy Gnocchi with Sage and Spring Onions

Ingredients
- 150 g Spring onions (2 bunches)
- 3 sprigs Sage
- 2 tbsp Olive oil
- 300 g Gnocchi (refrigerated section)
- 250 g Cherry tomatoes
- Salt
- Pepper
- 100 g Ricotta
Instructions
- 1. Wash the spring onions thoroughly.
- 2. Remove the dry ends.
- 3. Cut the spring onions into pieces about 2 cm in size.
- 4. Wash the sage leaves.
- 5. Shake them dry.
- 6. Carefully pluck the leaves from the stems.
- 7. Set aside a few nice leaves for decoration.
- 8. Cut the remaining sage into thin strips.
- 9. Pour the oil into a non-stick pan.
- 10. Heat the oil over medium heat.
- 11. Add the gnocchi to the pan.
- 12. Sauté the gnocchi briefly.
- 13. Add the chopped spring onions to the pan.
- 14. Add the sage strips to the pan.
- 15. Cover the pan with a lid.
- 16. Simmer the vegetables for about 5 minutes over medium heat.
- 17. Wash the cherry tomatoes.
- 18. Halve half of the tomatoes as desired.
- 19. Add all the tomatoes to the pan.
- 20. Heat the mixture over medium heat without the lid.
- 21. Let the tomatoes heat up for about 2 minutes.
- 22. Season the dish with salt.
- 23. Season the dish with pepper.
- 24. Plate the gnocchi.
- 25. Take a teaspoon of ricotta.
- 26. Distribute the ricotta in small portions over the gnocchi.
- 27. Garnish the dish with the saved sage leaves.
