  7. 7. Grate about one teaspoon of lemon zest.
  8. 8. Squeeze out the lemon juice.
  9. 9. Peel the garlic clove.
  10. 10. Press the garlic into a small bowl together with the butter.
  11. 11. Add the chopped parsley to the butter.
  12. 12. Add the lemon zest to the butter.
  13. 13. Add one teaspoon of lemon juice to the butter.
  14. 14. Mix the butter mixture well.
  15. 15. Season the butter with salt.
  16. 16. Place the butter in the refrigerator for at least 30 minutes.
  17. 17. Remove the outer leaves from the salad.
  18. 18. Set aside the small salad hearts.
  19. 19. Weigh out 400 to 500 grams of the remaining salad leaves.
