Ingredients
- 1 shallot
- 100 ml vegetable broth
- 3 tbsp white wine vinegar
- 1 tbsp hot mustard
- salt
- pepper
- 1 pinch sugar
- 100 ml olive oil
Instructions
- 1. Do not preheat the oven. We are making this sauce entirely by hand.
- 2. Take a small bowl and place it on your work surface.
- 3. Peel the shallot and cut it into very small cubes.
- 4. Add the broth, the vinegar, and the mustard to the bowl.
- 5. Season the mixture with salt, pepper, and a pinch of sugar.
- 6. Take a whisk and stir everything vigorously.
- 7. Stop stirring once the sugar and salt have completely dissolved.
- 8. Let the oil flow slowly and in a thin stream into the sauce while stirring constantly.
- 9. Keep stirring until the ingredients have combined into a creamy emulsion.
- 10. Taste the sauce again and adjust the seasoning if necessary.
- 11. Pour the finished sauce over your salad and serve it immediately.
