  1. 1. Do not preheat the oven. We are making this sauce entirely by hand.
  2. 2. Take a small bowl and place it on your work surface.
  3. 3. Peel the shallot and cut it into very small cubes.
  4. 4. Add the broth, the vinegar, and the mustard to the bowl.
  5. 5. Season the mixture with salt, pepper, and a pinch of sugar.
  6. 6. Take a whisk and stir everything vigorously.
  7. 7. Stop stirring once the sugar and salt have completely dissolved.
  8. 8. Let the oil flow slowly and in a thin stream into the sauce while stirring constantly.
  9. 9. Keep stirring until the ingredients have combined into a creamy emulsion.
  10. 10. Taste the sauce again and adjust the seasoning if necessary.
  11. 11. Pour the finished sauce over your salad and serve it immediately.
