🍽️ Fresh Dressing with Wild Garlic and Tomatoes

Ingredients
- 2 tomatoes
- 2 shallots
- 1 handful wild garlic
- 4 tbsp white balsamic vinegar
- 1 tbsp lemon juice
- 100 ml vegetable broth
- 1 pinch sugar
- 5 tbsp olive oil
- salt
- pepper (from the mill)
Instructions
- 1. Pour boiling water over the tomatoes.
- 2. Remove the tomatoes from the water immediately and let them cool down.
- 3. Peel the skin off the tomatoes.
- 4. Cut the tomatoes into quarters.
- 5. Remove the seeds from the tomatoes.
- 6. Dice the tomatoes into small cubes.
- 7. Peel the shallots.
- 8. Finely chop the shallots.
- 9. Wash the wild garlic.
- 10. Remove woody or wilted parts from the wild garlic.
- 11. Cut the wild garlic into thin strips.
- 12. Whisk the balsamic vinegar with the lemon juice.
- 13. Add the broth to the mixture.
- 14. Add the sugar to the mixture.
- 15. Add the oil to the mixture.
- 16. Season the dressing with salt.
- 17. Season the dressing with pepper.
- 18. Fold in the diced tomatoes into the dressing.
- 19. Fold in the wild garlic strips into the dressing.
- 20. Serve the dressing.
