🥗 Herring Salad with Apple and Onion

Ingredients
- 6 mild matjes fillets
- 300 g red beet (jar)
- 2 apples
- 1 red onion
- chive rolls (for garnishing)
- 1 egg yolk
- salt
- 1 tsp sharp mustard
- 175 ml neutral vegetable oil (e.g. sunflower oil)
- 1 tsp lemon juice
Instructions
- 1. Place the egg yolk, a pinch of salt, and the mustard in a bowl.
- 2. Whisk the ingredients vigorously with a wire whisk.
- 3. Drizzle the oil in slowly while stirring constantly.
- 4. Increase the oil flow to a thin stream later on.
- 5. Keep stirring until the mayonnaise is shiny and creamy.
- 6. Season the mayonnaise with lemon juice and a little salt.
- 7. Pat the herring dry.
- 8. Cut the herring into thin strips.
- 9. Remove the beetroot from the jar.
- 10. Let the beetroot drain.
- 11. Cut the beetroot into fine strips.
- 12. Wash the apples thoroughly.
- 13. Peel the apples.
- 14. Cut the apples in half.
- 15. Remove the core.
- 16. Slice the flesh into sticks.
- 17. Peel the onion.
- 18. Cut the onion in half.
- 19. Slice the onion into strips.
- 20. Mix all the prepared ingredients thoroughly.
- 21. Arrange the mixture on the plates.
- 22. Garnish the salad with fresh chives.
- 23. Serve the salad together with the mayonnaise.
