🥗 Caesar Salad with Crispy Croutons

Ingredients
- 3 slices toast bread
- 100 g bacon
- 100 ml olive oil
- 1 large romaine lettuce
- 1 clove garlic
- 1 tsp lemon juice
- 0.5 tsp hot mustard
- 1 tsp Worcestershire sauce
- 1 egg yolk
- 2 tbsp whipping cream (as needed)
- salt
- pepper (from the mill)
- 1 pinch sugar
- 2 tbsp grated parmesan
Instructions
- 1. Remove the crust from the bread.
- 2. Cut the bread into approx. 1 cm cubes.
- 3. Dice the bacon finely.
- 4. Heat 2 tbsp of oil in a pan.
- 5. Fry the bacon in the hot oil.
- 6. Remove the bacon from the pan.
- 7. Let the bacon drain on kitchen paper.
- 8. Fry the bread cubes in the remaining bacon fat until golden brown.
- 9. Let the croutons drain on kitchen paper as well.
- 10. Remove the tough stems from the romaine lettuce.
- 11. Wash the lettuce thoroughly.
- 12. Dry the lettuce well or spin it dry.
- 13. Tear the lettuce leaves into smaller pieces.
- 14. Peel the garlic.
- 15. Put the garlic into a blender.
- 16. Add the remaining oil to the blender.
- 17. Add the lemon juice to the blender.
- 18. Add the mustard to the blender.
- 19. Add 1 tsp of Worcestershire sauce to the blender.
- 20. Add the egg yolk to the blender.
- 21. Blend the ingredients in the blender until creamy.
- 22. Season the sauce with salt.
- 23. Season the sauce with pepper.
- 24. Season the sauce with sugar.
- 25. Thin the sauce if necessary with a little water or cream.
- 26. Mix the romaine lettuce with the dressing.
- 27. Distribute the salad onto bowls.
- 28. Sprinkle the croutons over the salad.
- 29. Sprinkle the bacon over the salad.
- 30. Garnish the salad with Parmesan.
- 31. Serve the salad.
