🥗 Colorful Tofu Salad with Fresh Herb Salsa

Ingredients
- 60 g parsley (3 bunches)
- 1 clove of garlic
- 2 anchovy fillets
- 5 g capers (1 tsp; jar)
- 1 tbsp lemon juice
- 40 g crème fraîche (2 tbsp)
- 5 tbsp olive oil
- salt
- pepper
- 1 head of lettuce
- 6 tomatoes
- 350 g smoked tofu
- 60 g sunflower seeds (4 tbsp)
Instructions
- 1. Wash the parsley thoroughly and shake it dry.
- 2. Peel the garlic clove.
- 3. Place the parsley, garlic, anchovies, capers, lemon juice, crème fraîche, three tablespoons of olive oil, salt, and pepper into a blender.
- 4. Blend the ingredients in the blender until you have a smooth sauce.
- 5. Wash the salad greens thoroughly.
- 6. Spin the salad dry.
- 7. Divide the salad among four plates.
- 8. Wash the tomatoes.
- 9. Cut the tomatoes into wedges.
- 10. Slice the tofu.
- 11. Heat the remaining oil in a frying pan.
- 12. Fry the tofu over medium heat for about three minutes on each side until golden brown.
- 13. Place the fried tofu and tomato wedges on top of the salad.
- 14. Season the dish with salt and pepper.
- 15. Sprinkle sunflower seeds over the salad.
- 16. Drizzle one quarter of the salsa over each portion.
