  1. 1. Wash the parsley thoroughly and shake it dry.
  2. 2. Peel the garlic clove.
  3. 3. Place the parsley, garlic, anchovies, capers, lemon juice, crème fraîche, three tablespoons of olive oil, salt, and pepper into a blender.
  4. 4. Blend the ingredients in the blender until you have a smooth sauce.
  5. 5. Wash the salad greens thoroughly.
  6. 6. Spin the salad dry.
  7. 7. Divide the salad among four plates.
  8. 8. Wash the tomatoes.
  9. 9. Cut the tomatoes into wedges.
  10. 10. Slice the tofu.
  11. 11. Heat the remaining oil in a frying pan.
  12. 12. Fry the tofu over medium heat for about three minutes on each side until golden brown.
  13. 13. Place the fried tofu and tomato wedges on top of the salad.
  14. 14. Season the dish with salt and pepper.
  15. 15. Sprinkle sunflower seeds over the salad.
  16. 16. Drizzle one quarter of the salsa over each portion.
