🥗 Fresh Salad with Asparagus, Mango, and Ham

Ingredients
- 300 g green asparagus
- salt
- 4 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1 pinch sugar
- 2 tbsp grape seed oil
- pepper
- 2 handfuls mixed leaf salad (e.g. arugula and watercress)
- 200 g mozzarella (20% fat)
- 1 mango
- 120 g prosciutto
Instructions
- 1. Peel the bottom three centimeters of the asparagus stalks.
- 2. Cook the asparagus stalks in salted water for about ten minutes until tender-crisp.
- 3. Rinse the asparagus with cold water and let it drain.
- 4. Cut the asparagus into three to four centimeter long pieces.
- 5. Wash the cucumber and cut off the ends.
- 6. Slice the cucumber or peel it into thin strips.
- 7. Whisk vinegar, lemon juice, sugar, and oil together in a bowl.
- 8. Season the marinade with salt and pepper.
- 9. Fold the asparagus and cucumber slices into the marinade.
- 10. Let the vegetables marinate for a few minutes.
- 11. Wash the leaf salads and spin them dry.
- 12. Tear the salad leaves into bite-sized pieces if necessary.
- 13. Slice the mozzarella.
- 14. Peel the mango and cut the flesh into thin strips.
- 15. Fold the leaf salads into the marinated vegetables.
- 16. Taste the mixture and adjust seasoning with salt and pepper.
- 17. Divide the salad onto plates.
- 18. Top the salad with mozzarella, mango, and ham slices.
- 19. Sprinkle with fresh pepper and serve the salad.
