  2. 2. Cook the asparagus stalks in salted water for about ten minutes until tender-crisp.
  3. 3. Rinse the asparagus with cold water and let it drain.
  4. 4. Cut the asparagus into three to four centimeter long pieces.
  5. 5. Wash the cucumber and cut off the ends.
  6. 6. Slice the cucumber or peel it into thin strips.
  7. 7. Whisk vinegar, lemon juice, sugar, and oil together in a bowl.
  8. 8. Season the marinade with salt and pepper.
  9. 9. Fold the asparagus and cucumber slices into the marinade.
  10. 10. Let the vegetables marinate for a few minutes.
  11. 11. Wash the leaf salads and spin them dry.
  12. 12. Tear the salad leaves into bite-sized pieces if necessary.
  13. 13. Slice the mozzarella.
  14. 14. Peel the mango and cut the flesh into thin strips.
  15. 15. Fold the leaf salads into the marinated vegetables.
  16. 16. Taste the mixture and adjust seasoning with salt and pepper.
