🥗 Colorful Salad with Turkey Rolls

Ingredients
- 2 chicory
- 100 g lamb's lettuce
- 1 small frisée
- 1 small arugula
- 3 tbsp apple cider vinegar
- 5 tbsp olive oil
- 0.5 sugar
- salt
- pepper (from the mill, to taste)
- 2 small carrots
- 2 small zucchini
- 100 g mushrooms
- 1 red onion
- 2 oranges
- 2 small onions
- 4 turkey cutlets (approx. 120 g)
- 1 tbsp medium-hot mustard
- 4 slices raw ham
- 60 g ghee
- 50 g pumpkin seeds
- 4 skewers
Instructions
- 1. Wash the salad greens thoroughly.
- 2. Remove any wilted or damaged leaves.
- 3. Dry the salad greens in a salad spinner.
- 4. Mix the apple cider vinegar with the two oils in a small bowl.
- 5. Season the dressing with salt, sugar, and pepper.
- 6. Peel the carrots.
- 7. Wash the zucchini.
- 8. Cut the carrots and zucchini into long sticks using a vegetable peeler or slicer.
- 9. Clean the mushrooms.
- 10. Slice the mushrooms just before serving to prevent them from turning brown.
- 11. Peel the red onion.
- 12. Halve the red onion.
- 13. Slice the red onion into thin slices.
- 14. Peel the oranges with a sharp knife, keeping the segments visible.
- 15. Cut along the sides of each orange segment from top to bottom to release them from the core.
- 16. Finely chop the peeled onions.
- 17. Finely chop the arugula.
- 18. Lightly pound the turkey breast cutlets to flatten them.
- 19. Season the turkey cutlets with salt and pepper.
- 20. Spread a little mustard over the cutlets.
- 21. Place the ham on top of the mustard-coated cutlets.
- 22. Evenly distribute the onion and arugula mixture over the ham.
- 23. Roll up the turkey cutlets tightly.
- 24. Secure the rolls with toothpicks.
- 25. Season the rolls with additional pepper.
- 26. Heat 40 grams of clarified butter in a pan.
- 27. Fry the rolls on all sides in the pan.
- 28. Preheat the oven to 180 degrees Celsius.
- 29. Place the browned rolls in the preheated oven.
- 30. Bake the rolls in the oven for the specified time.
