🥗 Fresh Salad with Mango and Shrimp

Ingredients
- 8 shrimp (kitchen-ready, with tail end)
- 5 tbsp olive oil
- 1 clove garlic
- juice of one lime
- 1 frisée lettuce
- 1 small radicchio
- 2 spring onions
- 1 mango
- 2 tbsp white wine vinegar
- salt
- pepper (from the mill)
- 3 tbsp whipping cream
- 2 tsp maple syrup
- lime wedges
Instructions
- 1. Mix 2 tablespoons of oil with finely chopped garlic and lime juice. Toss the shrimp in the mixture and let it marinate for about 30 minutes.
- 2. Separate the lettuce leaves, wash them, remove tough stems, and dry them thoroughly. Tear the leafy greens into smaller pieces. Wash the spring onions and slice them diagonally into pieces about 1 centimeter thick.
- 3. Peel the mango and cut the flesh into strips by slicing it away from the pit.
- 4. Whisk together vinegar, salt, pepper, syrup, cream, and 2 tablespoons of oil to make a dressing. Taste and adjust the seasoning as needed.
- 5. Heat 1 tablespoon of oil in a pan. Fry the shrimp for about 2 minutes on each side until well browned.
- 6. Toss the salad ingredients with the dressing and serve in a bowl. Place the shrimp on top and garnish the dish with lime wedges.
