Ingredients
- 200 g young spinach
- 200 g cherry tomatoes
- 250 g smoked salmon
- 3 tbsp lemon juice
- 1 tsp honey
- 400 g cream cheese
- 1 pinch organic lemon zest
- salt
- white pepper
- half a lemon slice

Instructions
- 1. Wash the spinach thoroughly.
- 2. Remove the tough stems from the spinach.
- 3. Spin the spinach dry.
- 4. Wash the tomatoes.
- 5. Cut the tomatoes into quarters.
- 6. Arrange the spinach, tomatoes, and salmon decoratively on plates or a large platter.
- 7. Whisk the lemon juice with the honey in a small bowl.
- 8. Drizzle the lemon-honey mixture over the salad.
- 9. Stir the cream cheese until creamy.
- 10. Fold the lemon zest into the cream cheese mixture.
- 11. Season the cream cheese mixture with salt.
- 12. Season the cream cheese mixture with pepper.
- 13. Scoop small dumplings (small balls) from the cream cheese mixture.
- 14. Distribute the cream cheese dumplings over the salad.
- 15. Garnish the salad with lemon slices.
- 16. Garnish the salad with fresh herbs.
- 17. Serve the salad immediately.
