🥗 Fresh salad with scallops and green asparagus

Ingredients
- 12 scallops (kitchen-ready, with roe)
- 600 g green asparagus
- salt
- 0.5 bunch chives
- 40 g butter
- pepper (from the mill)
Instructions
- 1. Rinse the scallops thoroughly.
- 2. Pat the scallops dry with a kitchen towel.
- 3. Wash the green asparagus.
- 4. Remove the woody lower ends of the asparagus.
- 5. Bring water with salt to a boil.
- 6. Add the asparagus to the boiling salted water.
- 7. Cook the asparagus for 2 to 3 minutes (this is called blanching).
- 8. Drain the asparagus.
- 9. Shock the asparagus immediately with cold water to stop the cooking process.
- 10. Let the asparagus drain well.
- 11. Rinse the chives under running water.
- 12. Shake the chives dry.
- 13. Cut the chives into fine rings.
- 14. Heat a frying pan.
- 15. Melt the butter in the pan.
- 16. Fry the scallops until golden brown on all sides.
- 17. Fry the asparagus together with the scallops until golden brown.
- 18. Season the ingredients with salt to taste.
- 19. Pepper the ingredients to taste.
- 20. Fold in the chopped chive rings.
- 21. Warm the serving plates.
- 22. Plate the salad on the pre-warmed plates.
- 23. Serve the dish immediately.
