  2. 2. Pat the scallops dry with a kitchen towel.
  3. 3. Wash the green asparagus.
  4. 4. Remove the woody lower ends of the asparagus.
  5. 5. Bring water with salt to a boil.
  6. 6. Add the asparagus to the boiling salted water.
  7. 7. Cook the asparagus for 2 to 3 minutes (this is called blanching).
  8. 8. Drain the asparagus.
  9. 9. Shock the asparagus immediately with cold water to stop the cooking process.
  10. 10. Let the asparagus drain well.
  11. 11. Rinse the chives under running water.
  12. 12. Shake the chives dry.
  13. 13. Cut the chives into fine rings.
  14. 14. Heat a frying pan.
  15. 15. Melt the butter in the pan.
  16. 16. Fry the scallops until golden brown on all sides.
  17. 17. Fry the asparagus together with the scallops until golden brown.
  18. 18. Season the ingredients with salt to taste.
  19. 19. Pepper the ingredients to taste.
  20. 20. Fold in the chopped chive rings.
  21. 21. Warm the serving plates.
  22. 22. Plate the salad on the pre-warmed plates.
  23. 23. Serve the dish immediately.
